Leek and Potato Soup
You will need: (Serves 2)
3Tbsp of olive oil
2 leeks stick (white part only)
I Onion (red or white)
2 Potatoes (Yukon Gold)
2 Tbsp of chopped flat Parsley
300ml or more of chicken stock
100ml of water
Salt and pepper to taste
3 Tbsp of parmesan cheese or as desire
Bacon (crisp oven roasted, and it is optional)
Direction
Heat the oil in a saucepan, add the onion and leek and cook over a low-medium heat, stirring frequently for about five minutes. Add chopped potatoes and stir frequently for about a minute, then add the chicken stock and 50ml of water, mix well and cover to cook. When the potato is cooked through (check with a fork), set aside to cool, then blend for about 30 seconds or as desired. Served with parmesan, crisp bacon, and parsley.
