Leek and Potato Soup





You will need: (Serves 2)

3Tbsp of olive oil
2 leeks stick (white part only)
I Onion (red or white)
2 Potatoes (Yukon Gold)
2 Tbsp of chopped flat Parsley
300ml or more of chicken stock
100ml of water
Salt and pepper to taste
3 Tbsp of parmesan cheese or as desire
Bacon (crisp oven roasted, and it is optional)



Direction
Heat the oil in a saucepan, add the onion and leek and cook over a low-medium heat, stirring frequently for about five minutes. Add chopped potatoes and stir frequently for about a minute, then add the chicken stock and 50ml of water, mix well and cover to cook. When the potato is cooked through (check with a fork), set aside to cool, then blend for about 30 seconds or as desired. Served with parmesan, crisp bacon, and parsley.

ALOE VERA JUICE




It has been a while since I blogged about anything, and finally I have decided to resuscitate the blog after an apparent MIA (death I mean) by sharing this favorite heatlthy drink. 

You will need: 
A blender
Aloe Vera: 150g
Cucumber: 100g chopped
Water: 3/4 to a cup or as needed
Parsley 2 Tbs(Optional)

Directions:
Wash clean the Aloe vera and cucumber before cutting. Cut the aloe skin off then scoop the juce into the blender, then add the chopped cucumber and water, and blend. If you prefer a smooth juice, you can sieve, but I prefer mine with all the shaft(nutrient if you will).
